COD LOIN

Cod loin is the prime part of a fillet taken above the bone. These are then prepared as boneless, skinless portions 200-225g each

Chunky Fish Pockets

Serves 4

Alternatively flat fish fillets can be used. Place the fillets onto a board skinned side up, divide the topping equally between the fillets and fold the fillet over

  • 4 x 200-225g cod loin
  • 4 cheese slices, cut into pieces
  • 4 cooked ham slices, cut into pieces
  • salt and black pepper
  • dash of lemon juice
  • olive oil
  • lemon to garnish

  1. preheat oven to 200C/400F, Gas mark 6
  2. make a incision in the flesh of the fish along the longest side to form a pocket mix the cheese and ham together and spoon into the pockets
  3. arrange the fish portions onto individual foil sheets, sprinkle with some olive oil, season and sprinkle with lemon juice. Loosely fold the foil to make individual foil parcels
  4. bake in the oven for 20-30 minutes until the fish is cooked
